Instead of eating yet another sad salad or takeout I decided to make myself a proper, health home cooked meal. I made quinoa with roasted sweet potatoes, carrots, and red onions. I paired it with avocado, tomato, cucumber, and kale. And topped it with a lemon, garlic, vinegar, parsley, cilantro, and cayenne dressing. It took about an hour and a half to make it and clean up and by the end I felt so calm and light. I used to hate cooking so it's weird how therapeutic I find it now. I wish I'd cooked a more elaborate meal, I could use a few more hours of solitude. Quinoa salad is my goto weekday meal and I love it but I'm thinking of trying out new quick recipes. What's your goto dish? I'd love to distract myself with new fun vegetarian recipes so if you have any recommendations please share.
